David's Favorite Chicken Salad

Four large servings

4 cups diced (or lightly shred in food processor) poached/cooked chicken

1 stalk celery cut into 1/4 inch dice

1/4 cup shallots chopped fine

1 teaspoon dill weed

1 tablespoon dill relish

2 tablespoons diced jalapeños

2 tablespoons finely chopped parsley

2 teaspoons freshly squeezed lemon juice

1 teaspoon dijon mustard

1/2 teaspoon black pepper

1/2 teaspoon David Wade Worcestershire Powder

1/3 to 1/2 cup mayonnaise (add more or less if desired) in a mixing bowl, toss in all the ingredients and refrigerate until ready to serve.Serve on a bed of lettuce with tomatoes or fill an avocado or make a delicious chicken salad sandwich
