Texas Gumbo

1 pound dried white Navy beans
8 cups water
1/2 pound of your choice of one: smoked German sausage, or smoked ham, or smoked chicken or smoked turkey cut into bite-size pieces
¼ pound margarine
2 onions, diced fine
2 ribs celery, diced 1
green bell pepper, diced fine
1 (16-ounce) can diced tomatoes
1 (15-ounce) can tomato sauce
1 tablespoon garlic powder
2 teaspoons powdered mustard
1 teaspoon Tabasco
2 tablespoons chili powder
2 tablespoons Worcestershire powder
1 tablespoon powdered ginger
1 tablespoon brown sugar
Salt and pepper to taste
1 (10-ounce) package frozen okra, sliced and thawed
Clean beans and place into a large pot with 8 cups of water. Boil slowly for two hours until beans are tender. Remove the floaters and add sausage, ham, chicken or turkey. Using a large skillet, melt margarine and sauté onion and green bell pepper until soft. Add tomatoes, tomato sauce, seasonings and okra. Bring to a simmer and stir for 5 minutes. Add all ingredients from the skillet to the pot with the cooked beans. Stir to combine and heat through. Serve over cooked rice.
